  • 1 pound boneless chicken breast or thighs cut into 1-inch pieces
Vegetables
  • 1 cup chopped zucchini cut into 1-inch half moons
  • 1 cup chopped bell peppers cut into 1-inch pieces
  • 1.5 cups chopped baby Bella mushrooms
  • 1 cup chopped purple onion cut into 1-inch pieces
Oils and Spices
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. Combine chicken and vegetables in a bowl. Mix spices and oil separately, then toss everything to coat.
  3. Spray air fryer basket with oil, add mixture in batches, and cook for 10 minutes, shaking halfway.
  4. Check for doneness; chicken should reach 165°F internally. Serve hot, garnished with parsley and lemon if desired.

For extra flavor, add fresh parsley and a squeeze of lemon before serving.
