- Preheat oven to 400°F (200°C). Pat pork dry, season with salt, pepper, and Dijon mustard.
- Heat olive oil in skillet, sear pork until golden (~3-4 min per side).
- Transfer skillet to oven, roast 15-20 min until internal temp reaches 145°F (63°C).
- Let pork rest, then sauté garlic in same skillet, add broth, scrape browned bits.
- Stir in heavy cream and Dijon mustard, simmer to thicken sauce.
- Slice pork, serve with sauce drizzled on top.
