  • 1.5 lbs beef tenderloin
  • 2 tbsp dijon mustard
  • 1 cup heavy cream
  • 1 tbsp fresh thyme (or rosemary)
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • to taste salt and pepper
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 400°F (200°C). Pat pork dry, season with salt, pepper, and Dijon mustard.
  2. Heat olive oil in skillet, sear pork until golden (~3-4 min per side).
  3. Transfer skillet to oven, roast 15-20 min until internal temp reaches 145°F (63°C).
  4. Let pork rest, then sauté garlic in same skillet, add broth, scrape browned bits.
  5. Stir in heavy cream and Dijon mustard, simmer to thicken sauce.
  6. Slice pork, serve with sauce drizzled on top.

Notes

Use a meat thermometer to ensure perfect doneness.
