Ingredients
  

Meat
  • 1 lb flank steak (or skirt steak, or other cut) see footnote 1
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda (optional) see footnote 1
  • 1/2 cup chicken stock (or beef stock)
  • 2 tablespoons shaoxing grape juice + vinegar (or dry sherry)
  • 1 teaspoon dark soy sauce see footnote 2
  • 2 teaspoons brown sugar (or white sugar)
  • 1 head broccoli cut into bite-size florets
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced

Method
 

  1. Slice beef against the grain into 0.5 cm slices, marinate with soy sauce, oil, and cornstarch for 10 minutes.
  2. Mix sauce ingredients in a bowl. Steam broccoli until tender, then set aside.
  3. Cook beef in a hot skillet until browned, then add garlic and ginger, stir briefly.
  4. Return broccoli to pan, add sauce, cook until thickened, then serve hot.

Notes

Use high heat for stir-frying to prevent sticking and ensure quick cooking.
