Method
- Preheat oven to 425°F (220°C). Scrub and dry potatoes.
- Pierce potatoes, rub with olive oil, and sprinkle with salt. Bake for 45-60 minutes.
- Let potatoes cool slightly, then cut in half and fluff insides with a fork.
- Top with cheddar, chives, and a dollop of sour cream. Season with salt and pepper.
- Serve immediately and enjoy!

For a vegan version, substitute cheese with vegan cheese and sour cream with plant-based yogurt.
