Classic Cheddar and Chives

Ingredients
  

Potatoes
  • 4 large russet potatoes Thoroughly scrubbed
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1/2 cup sour cream or Greek yogurt
  • to taste Salt and pepper
  • for coating Olive oil

Method
 

  1. Preheat oven to 425°F (220°C). Scrub and dry potatoes.
  2. Pierce potatoes, rub with olive oil, and sprinkle with salt. Bake for 45-60 minutes.
  3. Let potatoes cool slightly, then cut in half and fluff insides with a fork.
  4. Top with cheddar, chives, and a dollop of sour cream. Season with salt and pepper.
  5. Serve immediately and enjoy!

Notes

For a vegan version, substitute cheese with vegan cheese and sour cream with plant-based yogurt.
