Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
Main ingredients
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup chopped walnuts (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix dry ingredients in a bowl; whisk wet ingredients separately.
  3. Combine wet and dry, then fold in cranberries and walnuts if using.
  4. Pour batter into pan and smooth top; bake for 55-60 minutes.
  5. Cool in pan 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a sprinkle of cinnamon or nutmeg to the dry ingredients.
