Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix dry ingredients in a bowl; whisk wet ingredients separately.
- Combine wet and dry, then fold in cranberries and walnuts if using.
- Pour batter into pan and smooth top; bake for 55-60 minutes.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
Notes
For extra flavor, add a sprinkle of cinnamon or nutmeg to the dry ingredients.
