Ingredients
  

Vegetables
  • 1 head cauliflower, cut into florets
  • 8 ounces elbow macaroni
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 1/4 cup cream cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs (optional, for topping)

Method
 

  1. Preheat oven to 350°F (175°C). Cook pasta and steam cauliflower until tender.
  2. Blend cauliflower, milk, cream cheese, garlic powder, onion powder, salt, and pepper until smooth.
  3. Mix cooked pasta with cauliflower sauce and half of the cheddar cheese.
  4. Transfer to a baking dish, top with remaining cheese and breadcrumbs if desired, then bake for 20-25 minutes.
  5. Let cool slightly, then serve warm.

Notes

For a crunchier topping, add more breadcrumbs or bake a few extra minutes.
