  • 1 cup mashed cooked sweet potato about 1 medium
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup maple syrup or honey
  • 1/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment.
  2. Mix sweet potato, nut butter, maple syrup, eggs, and vanilla until smooth. Add cocoa, baking soda, and salt; stir well. Fold in chocolate chips if using.
  3. Pour batter into pan, spread evenly, and bake for 20–25 minutes.
  4. Cool completely before slicing into squares.

Notes

For extra flavor, sprinkle with sea salt before baking.
