Method
- Soak wooden skewers in water for 30 minutes.
- Blend mangoes, red onion, jalapeño (if using), cilantro, lime juice, olive oil, honey (or agave), salt, and pepper until smooth. Adjust seasonings.
- If the coulis is too thick, add water until desired consistency is reached.
- Thread shrimp onto skewers or leave them loose.
- Season shrimp with salt and pepper.
- Preheat grill to medium-high heat.
- Grill shrimp for 2-3 minutes per side, until pink and opaque.
- Serve shrimp with spicy mango lime coulis.
Notes
For extra flavor, marinate the shrimp in a little of the mango lime coulis before grilling.
