Ingredients
  

Shrimp
  • 1 pound large shrimp, peeled and deveined
Mango Coulis
  • 2 ripe mangoes, peeled and chopped
  • 0.25 cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced (optional) optional
  • 0.25 cup fresh cilantro, chopped
  • 0.25 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey or agave nectar
  • to taste Salt and pepper
  • Skewers (if using) if using

Method
 

  1. Soak wooden skewers in water for 30 minutes.
  2. Blend mangoes, red onion, jalapeño (if using), cilantro, lime juice, olive oil, honey (or agave), salt, and pepper until smooth. Adjust seasonings.
  3. If the coulis is too thick, add water until desired consistency is reached.
  4. Thread shrimp onto skewers or leave them loose.
  5. Season shrimp with salt and pepper.
  6. Preheat grill to medium-high heat.
  7. Grill shrimp for 2-3 minutes per side, until pink and opaque.
  8. Serve shrimp with spicy mango lime coulis.

Notes

For extra flavor, marinate the shrimp in a little of the mango lime coulis before grilling.
