  • 0.5 cup Plain Fat Free Greek Yogurt
  • 3 pieces Bananas ripe
  • 1 can 15 1/2 ounce Rinsed Chickpeas drained and rinsed
  • 2 teaspoons Baking Powder
  • 2 teaspoons Cinnamon
  • 2 teaspoons Vanilla Extract
  • 0.5 teaspoon Salt
  • 4 eggs Eggs
  • 0.5 medium Apple cut into thin slices

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Blend yogurt, bananas, chickpeas, baking powder, cinnamon, vanilla, salt, and eggs until smooth.
  3. Divide batter evenly into muffin cups and top with apple slices.
  4. Bake for 30 minutes until golden brown, then cool and serve.

Notes

Using ripe bananas and chickpeas adds natural sweetness and protein.
