  • 2 pounds beef stew meat
Vegetables
  • 1 large onion
  • 3 cloves garlic
  • 2 medium carrots
  • 2 medium potatoes
Liquids & Seasonings
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme

Method
 

  1. Brown beef in a Dutch oven over medium-high heat.
  2. Add onion and garlic; cook until translucent.
  3. Add carrots and potatoes; cook for 5 minutes.
  4. Stir in beef broth, tomato paste, and thyme; bring to a boil.
  5. Reduce heat, cover, and simmer for 2.5 hours. Season with salt and pepper.
