Ingredients
  

Pasta
  • 8 oz elbow macaroni
  • 1 cup cauliflower florets
  • 1 cup butternut squash, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper

Method
 

  1. Cook the macaroni according to package instructions; drain and set aside.
  2. Steam cauliflower and squash until tender, about 10-15 minutes.
  3. Blend steamed veggies with milk, garlic, and onion powder until smooth.
  4. Melt butter in a large pot, stir in veggie mixture, cook 2-3 minutes.
  5. Add cheese, stir until melted, then mix in cooked pasta. Season with salt and pepper.

Notes

You can add a pinch of paprika or cayenne for extra flavor.
