Ingredients

  • 2 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • to taste Salt and pepper
  • 1/2 cup crushed beef rinds (optional for topping)
  • 2 tablespoons butter

Method
 

  1. Preheat oven to 375°F (190°C). Steam cauliflower until tender, about 5-7 minutes.
  2. Mix cauliflower, cheeses, cream, spices, salt, and pepper until well combined.
  3. Transfer to a greased baking dish, sprinkle beef rinds if using, and dot with butter.
  4. Bake for 25-30 minutes until golden and bubbly. Cool slightly before serving.
