Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Add-ins
  • 1 cup dried cranberries

Method
 

  1. Preheat oven to 350°F (175°C). Cream butter and sugar until fluffy.
  2. Mix in egg, lemon juice, and lemon zest.
  3. Combine dry ingredients and gradually add to wet mixture.
  4. Fold in dried cranberries and drop spoonfuls onto baking sheet.
  5. Bake for 10-12 minutes, cool on wire rack.

Notes

For extra lemon flavor, add more lemon zest or juice.
