  • 1/2 cup unsweetened shredded coconut
Wet ingredients
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch salt

Method
 

  1. Combine oats and coconut in a large bowl.
  2. Melt honey and coconut oil in a saucepan over low heat.
  3. Stir in lemon zest, lemon juice, vanilla, and salt; mix well.
  4. Pour wet mixture over dry ingredients and combine.
  5. Drop spoonfuls onto a lined tray and flatten slightly.
  6. Refrigerate for 30 minutes before serving.
