Method
- Preheat oven to 325°F (160°C). Line a 8x8 inch baking dish with parchment.
- Beat egg whites with cream of tartar until stiff peaks form. Set aside.
- Melt butter and let cool. Beat egg yolks with sugar until pale, then add vanilla, cinnamon, pumpkin spice, and butter.
- Mix in flour and pumpkin puree with some milk. Gradually add remaining milk. Fold in egg whites.
- Pour batter into prepared dish and bake for 60-65 minutes. Cool completely before serving.

Refrigerate before serving for best texture.
