Ingredients
  

Crust
  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (cold and cubed)
  • ¼ tsp salt
Filling
  • 1 can (15 oz) pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ tsp salt
  • 1 cup evaporated milk
Optional toppings
  • Whipped cream or powdered sugar for serving

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
  2. Mix flour, sugar, and salt; cut in butter until crumbly. Press into pan and bake 15 mins.
  3. Whisk pumpkin, sugar, eggs, vanilla, spices, and salt. Add milk and mix until smooth.
  4. Pour filling over crust and bake 35-40 mins until set. Cool completely.
  5. Refrigerate at least 2 hours. Slice and serve with whipped cream or powdered sugar.

Notes

Chill the bars well before slicing for clean cuts.
