Pumpkin Pudding
  • 15 oz canned pumpkin puree or homemade
  • 0.5 cup coconut cream
  • 1 tablespoon Califia Farms Unsweetened BetterHalf
  • 3 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 3 tablespoons pure maple syrup
  • 0.25 teaspoon ground nutmeg
  • pinch kosher salt
  • 1 tablespoon chia seeds
Whipped Coconut Cream
  • 0.25 cup coconut cream
  • 0.33 teaspoon vanilla extract
  • 1 tablespoon Califia Farms Unsweetened BetterHalf Creamer

Method
 

  1. Mix pumpkin puree, coconut cream, BetterHalf, pumpkin pie spice, vanilla, maple syrup, nutmeg, salt, and chia seeds until smooth.
  2. Pour into serving dishes and refrigerate for at least 2 hours to set.
  3. Whip coconut cream with vanilla and BetterHalf Creamer until fluffy, then top the pudding.

Notes

Chill the pudding well before serving for best texture.
