Ingredients
  

Sweet Potatoes
  • 2 pounds sweet potatoes (about 3 large, peeled and cut into 1/2-inch pieces)
  • 2 tablespoons melted coconut oil
  • 3/4 teaspoon fine sea salt use less if using table salt
  • 1 tablespoon light brown sugar firmly packed
  • 2 tablespoons olive oil
  • 3/4 teaspoon fine sea salt use less if using table salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground chili powder see note 1
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder

Method
 

  1. Preheat oven to 425°F (220°C). Peel and cube sweet potatoes, then toss with melted coconut oil, salt, and brown sugar. Spread evenly on a sheet pan and roast for 27–35 minutes, flipping every 10 minutes.
  2. For seasoned version, toss sweet potatoes with olive oil, salt, pepper, chili powder, paprika, cumin, and garlic powder before roasting. Roast similarly for 27–35 minutes, flipping every 10 minutes.

Notes

Flip the sweet potatoes every 10 minutes for even roasting.
