Ingredients
  

Salmon
  • 2 salmon fillets 6-8 oz each
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper optional
  • Salt and pepper to taste
Asparagus
  • 1 lb asparagus trimmed
  • 1 tbsp butter
  • 2 cloves garlic minced
  • 0.25 cup grated Parmesan cheese
Potatoes
  • 1.5 lbs baby potatoes quartered
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with oil, garlic, rosemary, thyme, salt, and pepper. Roast for 20 minutes.
  3. Mix oil, paprika, garlic powder, cayenne (optional), salt, and pepper. Rub on salmon.
  4. Add salmon to baking sheet with potatoes. Bake for 12-15 minutes.
  5. Melt butter, add garlic, cook 1 minute. Add asparagus, cook 5-7 minutes.
  6. Stir in Parmesan cheese until melted.
  7. Serve salmon with asparagus and potatoes. Enjoy!

Notes

Adjust the amount of cayenne pepper to your spice preference. You can also add a squeeze of lemon juice to the salmon after baking for extra flavor.
