Stuffed Salmon

Delicious and healthy stuffed salmon fillets packed with quinoa, spinach, and feta. A quick and easy weeknight meal!

Ingredients
  

Salmon
  • 4 salmon fillets 6-8 ounces each
Stuffing
  • 1 cup cooked quinoa
  • 0.5 cup chopped spinach
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons chopped sun-dried tomatoes oil-packed, drained
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
Serving
  • Lemon wedges for serving

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Combine quinoa, spinach, feta, sun-dried tomatoes, garlic, olive oil, salt, and pepper in a bowl.
  3. Make a pocket in each salmon fillet.
  4. Stuff each salmon fillet with the quinoa mixture.
  5. Place the stuffed salmon fillets on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes, or until salmon is cooked through.
  7. Serve with lemon wedges.

Notes

Adjust the amount of feta cheese and sun-dried tomatoes to your liking.
