Method
- Preheat oven to 375°F (190°C).
- Combine quinoa, spinach, feta, sun-dried tomatoes, garlic, olive oil, salt, and pepper in a bowl.
- Make a pocket in each salmon fillet.
- Stuff each salmon fillet with the quinoa mixture.
- Place the stuffed salmon fillets on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until salmon is cooked through.
- Serve with lemon wedges.

Adjust the amount of feta cheese and sun-dried tomatoes to your liking.
