Sweet Potato Casserole

Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes peeled and mashed
  • 0.5 cup granulated sugar
  • 1 tsp kosher salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 0.5 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 0.5 cup all-purpose flour
  • 1 cup chopped pecans
  • 0.5 cup unsalted butter, melted for topping

Method
 

  1. Cook sweet potatoes until soft, then peel and mash.
  2. Preheat oven to 375°F (190°C). Spread mashed sweet potatoes in a greased dish.
  3. Mix mashed sweet potatoes, sugar, salt, vanilla, eggs, and melted butter until smooth, then bake for 25 minutes.
  4. Prepare topping by mixing brown sugar, flour, pecans, and melted butter, then sprinkle over casserole.
  5. Bake for an additional 10–15 minutes until topping is golden. Serve warm.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the topping.
