Method
- Cook sweet potatoes until soft, then peel and mash.
- Preheat oven to 375°F (190°C). Spread mashed sweet potatoes in a greased dish.
- Mix mashed sweet potatoes, sugar, salt, vanilla, eggs, and melted butter until smooth, then bake for 25 minutes.
- Prepare topping by mixing brown sugar, flour, pecans, and melted butter, then sprinkle over casserole.
- Bake for an additional 10–15 minutes until topping is golden. Serve warm.
Notes
For extra flavor, add a pinch of cinnamon or nutmeg to the topping.
