Ingredients
  

Seasoning
  • 4 g Kosher salt
  • 4 g baking soda
Potatoes
  • 1814 g russet or Yukon Gold potatoes, peeled and cut into chunks about 2kg
Fat and herbs
  • 75 ml extra-virgin olive oil, duck fat, goose fat, or beef fat
  • 1 small handful fresh rosemary leaves, finely chopped
  • 3 cloves garlic, minced
  • to taste freshly ground black pepper
  • small handful fresh parsley leaves, minced

Method
 

  1. Preheat oven to 450°F (230°C).
  2. Boil water with salt and baking soda, then cook potatoes until tender, about 10 minutes.
  3. Heat oil with rosemary and garlic over medium heat until garlic turns golden, about 3 minutes.
  4. Drain potatoes, rest for 30 seconds, then toss with infused oil, salt, and pepper until coated.
  5. Spread potatoes on a baking sheet and roast until crispy, about 40 minutes.

Notes

For extra crispiness, shake the potatoes in the pan to roughen the surface before roasting.
