Dough
  • 1 cup butter (at room temp)
  • 1.5 cup sugar
  • 2 large eggs
  • 2.75 cup flour
  • 2 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 3 tablespoons sugar (for coating)
  • 3 teaspoons cinnamon

Method
 

  1. Cream butter and sugar, then add eggs.
  2. Mix in sifted flour, tartar, baking soda, and salt.
  3. Chill dough for at least 15 minutes.
  4. Combine sugar and cinnamon; roll dough into balls, coat, and place on sheet.
  5. Bake at 400°F (200°C) for 8-10 minutes, then cool.

Notes

For softer cookies, slightly underbake and cool on a wire rack.
