  • 2 large eggs at room temperature
  • 1 can (15-ounce) pumpkin puree
  • cup light brown sugar packed
  • cup unsalted butter melted
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cloves
  • ¼ cup mini semisweet chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper.
  2. Whisk eggs, pumpkin, sugar, melted butter, and vanilla until smooth.
  3. Mix in flours, baking powder, spices, baking soda, salt, and cloves. Fold in chocolate chips if desired.
  4. Pour batter into pan and bake for 62-67 minutes until a toothpick comes out clean.
  5. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
