Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Cream butter, sugars until fluffy; beat in eggs and vanilla.
  3. Mix in flour, baking soda, cinnamon, salt; stir in oats, cranberries, and chocolate chips.
  4. Drop spoonfuls onto sheets; bake 10-12 minutes until golden.
  5. Cool briefly on sheets, then transfer to racks to cool completely.

Notes

For softer cookies, slightly underbake; store in an airtight container.
