Method
- Brown beef cubes in olive oil, then transfer to slow cooker.
- Sauté onions and garlic in the same skillet, then add to slow cooker.
- Add carrots, mushrooms, beef broth, tomato paste, thyme, bay leaf, salt, and pepper. Stir well.
- Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
- Remove bay leaf, garnish with parsley, and serve with bread or mashed potatoes.
Notes
For richer flavor, marinate beef in wine and vinegar mixture overnight.
