Slow Cooker Beef Bourguignon

Ingredients
  

Meat
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup grape juice + 1 tbsp vinegar (burgundy or pinot noir)
  • 2 cups beef broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups mushrooms, quartered
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf bay leaf
  • to taste salt and pepper
  • 2 tbsp olive oil
Garnish
  • fresh parsley for garnish

Method
 

  1. Brown beef cubes in olive oil, then transfer to slow cooker.
  2. Sauté onions and garlic in the same skillet, then add to slow cooker.
  3. Add carrots, mushrooms, beef broth, tomato paste, thyme, bay leaf, salt, and pepper. Stir well.
  4. Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
  5. Remove bay leaf, garnish with parsley, and serve with bread or mashed potatoes.

Notes

For richer flavor, marinate beef in wine and vinegar mixture overnight.
